The lean meat of tuna has less fat so it is the part that easily demonstrates the quality in its taste. Top-quality lean meat has a smooth texture, an elegant acidity, and there are a subtle sweetness and rich aroma in the fat. Whether it is raw and unaltered or soaked in soy sauce (Zuke), you will get a sense of the chef’s artistry.

It is thought the method of Zuke preparation was initiated by Ebisuzushi, which had street stalls in the Nihonbashi district of Tokyo around 1830 to 1844, when there were high catches of tuna and the fish could be found all over Edo. The flavor become popular and spread out across the whole of the city.
