Monkfish liver (Ankimo)

Ankimo is the liver of the Monkfish. It is highly valued as a delicacy, and has both a rich taste like foie gras and a mellow texture. When the thin skin and blood vessels, which worsen the texture, are carefully removed during preparation, the liver loses its shape. This is then made into round shapes, firmed through steaming and presented beautifully. With its rich deliciousness, Ankimo is called “Foie Gras of the Sea.” Its most prominent characteristic is the smooth texture that seems to melt in your mouth.
