【Nigiri sushi: Shiromi】
Striped jack (Shimaaji) is the most delicious of the Horse mackerel (Aji) family. It is a high-quality fish, indispensable as a summer sushi topping or sashimi dish. Wild ones that are caught during summer are wonderfully fine-textured with high-quality fat. At the peak of the season, the succulent, milky-white flesh of the striped jack acquires a faint amber hue.
The best fish is considered to weigh 1 to 2 kg. One fish can be sold for 10,000 to 20,000 yen. Unfortunately, wild-caught fish are rare and 99% of them are farm-raised.
